Thompson Bros Organic Mediterranean Gin
Dornoch Distillery’s multi-award-winning gin is distilled right here on the grounds of the Dornoch Castle Hotel. This gin is built up of single infusions of fresh seasonal citrus and herbs that are slowly blended with their base blend of botanicals to create a bright, clean and citrus lead gin. The Thompsons Brothers Organic Mediterranean Gin 70cL (45.7%) is available on the Dornoch Distillery website or individual sales from Dornoch Castle Hotel’s Whisky Bar RRP £32.50.

Dornoch Distillery
A homage to older style of whisky in the grounds of the Dornoch Castle Hotel
The Dornoch Distillery started production in 2017, using heritage barley, spent brewers yeast and longer fermentation times to develop a whisky style that resembles an older style of whisky and produces a spirit with a greater depth of flavour.
Dornoch Distillery produces approximately 12,000 litres of alcohol a year, making it one of the smallest whisky distilleries in Scotland. Due to the size of the distillery, there are no tours available, but you can see through the red doors during production, and staff are happy to answer questions when they have time.
